Every exercise, with equipment-limited and pain-limited alternatives.

Substitute freely. The exercise is a delivery mechanism for recruitment and tension — if a different movement delivers those for the same muscle, it is equivalent.
Keep the resistance profile. Replacing a stretch-loaded exercise with a contracted-position one is not a substitution, it is a different stimulus.

Home gym, dumbbells only
Fully runnable. Incline and flat DB press, single-arm rows, DB pullover for lats, laterals, overhead extensions, curls. Lower: goblet squat, Bulgarian split squat, RDL, single-leg calf raise, Nordic curls.
The limit arrives when dumbbells get too light for lower-body compounds. Bulgarian split squats and single-leg work extend that runway considerably.
When a substitution is not a substitution
Replacing overhead triceps extensions with pushdowns leaves the long head untrained at length. Replacing seated leg curls with lying ones trains hamstrings at a shorter length. Replacing incline presses with flat ones changes which part of the chest is loaded hardest.
These are all fine as choices. They are not equivalent, and the table above marks the cases where the swap costs you something.
